4 tablespoons unsalted peanuts, roughly chopped
1 1/2 cups (9oz) soft light brown sugar
2 tablespoons clear honey
(see measure conversions for more information)
- Remove from the heat.
- Place the sugar, honey and 1 tablespoon of water in a pan and heat gently, stirring occasionally, until the sugar has dissolved.
- Bring to the boil without stirring, and then boil gently for about 2 minutes, or until the mixture reaches 116oC/240oF (soft ball stage).
- Remove the pan from the heat.
- Stir in the sesame seeds and nuts, mixing well.
- Using 2 teaspoons quickly form the mixture into small balls.
- Place on greaseproof paper.
- Leave the balls until cool, firm and set, then serve.
- Store the balls in an airtight container.
