6oz butter
3 eggs
2 level teaspoons mixed spice
1 level teaspoon cinnamon
6oz caster/superfine sugar
12oz icing/confectioner's sugar
1 teaspoon vanilla extract
2 tablespoons milk
1 oz walnuts finely chopped
(see measure conversions for more information)
- Cream fat and sugar till light and fluffy.
- Add the eggs one at a time, beating thoroughly.
- Fold in the dry ingredients.
- Divide mixture equally between two well-greased tins.
- Bake for 25 - 30 minutes at 375oF/190oC/gas mark 4.
- Turn out on to wire tray and leave till cold.
- Gradually stir in some of the sugar then some of the milk repeating until both are used up.
- Cream well till mixture is light, fluffy and smooth.
- Split each cake in half .
- Sandwich layers together with the vanilla cream.
- Spread the remainder of the cream over top and sides of cake.
- Press the chopped walnuts into the cream on the sides of the cake.
- Decorate the top of the cake with the peaches.
- Chill before serving.

- Beat the butter with the vanilla essence until soft.- Gradually stir in some of the sugar then some of the milk repeating until both are used up.
- Cream well till mixture is light, fluffy and smooth.
- Split each cake in half .
- Sandwich layers together with the vanilla cream.
- Spread the remainder of the cream over top and sides of cake.
- Press the chopped walnuts into the cream on the sides of the cake.
- Decorate the top of the cake with the peaches.
- Chill before serving.
