1/2 teaspoon salt
3/4 teaspoon baking powder
1oz suet
1 1/2 oz peeled, shredded, raw potato
water to mix
4oz cheese, grated
1 leek, sliced and washed
1/2 teaspoon mustard powder
pepper
salt

- Roll out the dough.
- Use three quarters of the dough to line a greased 2 pint pudding basin.
- Mix together all the filling ingredients.
- Spoon into the pastry lined basin.
- Make a lid from the remaining dough.
- Cover with a cloth and steam for 2 hours.

How to make Pathfinder pudding:
A cheesy parsnip and leek steamed pudding. It was a wartime recipe that was economical, filling and nutritious. Nowadays it may not be quite so economical because of the length of time needed to cook although it may be possible to adapt the recipe for microwave cooking.Ingredients
