N.B. Be careful serving raw egg to vulnerable (i.e. the young and old).
2 tablespoons caster/superfine sugar
white of 1 small egg
1/4 pint double cream
finely diced mango and pineapple to serve
(see measure conversions for more information)
- Put in a sieve over a basin to catch the juice.
- Make the juice up to 1/2 pint with cold water.
- Pour into a pan and add the sugar.
- Stir over a low heat until the sugar dissolves.
- Bring to the boil and boil rapidly stirring all the time.
- Remove from the heat and cool.
- Whisk the egg whites until thick and add the cooled syrup.
- Whip the cream and fold into the juice and sugar mix.
- Put into a suitable container and freeze for at least 4 hours.
- Remove from freezer 10 minutes before serving.
- Serve with diced fruit and extra cream.
