How to make parsnip fritters:
Parsnips are a delicious winter root vegetable. They are usually eaten boiled, creamed or baked. This is an extremely nice and different way of serving parsnip.


2 large parsnips
1 tablespoon butter
2 tablespoons plain flour
black pepper
2 tablespoons olive oil for frying
(see measure conversions for more information)


- Rub the butter into the flour.
- Cook and mash the parsnips.
- Mix the parsnips with the flour and butter mix.
- Season to taste.
- Beat until as smooth as possible.
- Heat the oil and put spoonfuls of parsnip mixture into hot oil.
- Fry until golden brown on both sides.
