2 tablespoons plain flour
salt
black pepper
2 tablespoons olive oil for frying

- Cook and mash the parsnips.
- Mix the parsnips with the flour and butter mix.
- Season to taste.
- Beat until as smooth as possible.
- Heat the oil and put spoonfuls of parsnip mixture into hot oil.
- Fry until golden brown on both sides.
