How to make orange and walnut tea bread:
One of a whole range of loaf cakes which can be yeast cakes or like this one just reliant on raising agents. The main function of these cakes was as a long lasting cake which could be used over a period of weeks. These sort of cakes are always sweetened with all manner of dried fruit (sometimes fresh banana) and nuts.


3 cups organic self raising flour
1/4 teaspoon cinnamon
2 tablespoons golden syrup
3 tablespoons soft brown sugar
6 tablespoons organic butter
2 tablespoons organic orange juice
3 tablespoons candied peel, chopped
3 tablespoons walnuts, chopped
3 organic free-range eggs

- Sieve flour and cinnamon into a large bowl.
- Heat sugar, syrup, butter and orange juice until sugar has dissolved.
- Stir the peel and walnuts into the flour and make a well in the centre.
- Break eggs into this and mix in well with a wooden spoon.
- Add warm sugar mixture and beat well, making sure all the flour is incorporated.
- Pour into a two pound greased loaf tin.
- Bake 160 degrees centigrade (see temperature conversions) for 75-90 minutes.
- Cool on a wire rack and serve at tea-time!
