How to make orange juice cake:
A very light, fatless sponge, flavoured with a hint of orange.


5 eggs separated
7oz caster/superfine sugar
8oz plain/all purpose flour
pinch of salt
2 teaspoons baking powder
1 teaspoon lemon juice
scant 1/4 pint orange juice
(see measure conversions for more information)


- Beat the egg yolks until frothy.
- Add half the sugar to the yolks.
- Beat until all the sugar has dissolved.
- Sift flour, salt and baking powder together.
- Add the flour to the egg yolk and sugar mixture.
- Mix in the orange juice.
- Whip egg whites until stiff, fold in remaining sugar.
- Fold the egg white and sugar mixture into the cake mixture.
- Put in a greased 8 inch cake tin, and bake at 180 degrees C. for 1 hour.
- Cool on a wire rack.
