1/2 lb caster sugar
4 large eggs
1/2 lb plain/all purpose flour
grated rind of 1 orange
1/2 lb icing/confectioner's sugar
orange juice (about 3 dessertspoons)
(see measure conversions for more information)
- Beat in the eggs, one at a time, adding 1 tablespoonful of flour with each addition.
- Fold in the remaining flour and the orange peel.
- Spoon into a well-greased and line 7 inch cake tin.
- Bake at 170 degrees C. for 2 hours.
- Allow to cool in the tin for a few minutes.
- Turn out and cool on a wire rack.
- Make icing by mixing together icing sugar and enough orange juice to give coating consistency.

This is a large cake baked as one (not in two halves). It contains 4 eggs and needs long, slow baking. The temperature is low and so the baking time has to be fairly lengthy. Everyone knows their own oven and with this cake you can always check for "doneness" with the knife or metal skewer test (just push the skewer in and if it comes out clean the cake is done). You may find that less time in your oven is sufficient but that is for you to judge.

do i really have to bake the cake for 2 hours that seems a very long time for a cake
