How to make orange cake:
A lovely, light sponge cake with a subtle orange flavour. This extravagant cake is topped with a delicious fruity icing.


1/2 lb butter
1/2 lb caster sugar
4 large eggs
1/2 lb plain/all purpose flour
grated rind of 1 orange
1/2 lb icing/confectioner's sugar
orange juice (about 3 dessertspoons)

- Cream butter and sugar together until light in colour and fluffy in texture.
- Beat in the eggs, one at a time, adding 1 tablespoonful of flour with each addition.
- Fold in the remaining flour and the orange peel.
- Spoon into a well-greased and line 7 inch cake tin.
- Bake at 170 degrees C. for 2 hours.
- Allow to cool in the tin for a few minutes.
- Turn out and cool on a wire rack.
- Make icing by mixing together icing sugar and enough orange juice to give coating consistency.
