How to make orange butter:
An unusual version of a savory butter. this could also be done with lemon and is useful to keep frozen and used as required.


1/2 cup butter
the grated rind of two oranges
2 teaspoons finely chopped parsley
(see measure conversions for more information)


- Mash the finely grated orange rind with the butter.
- Shape into a long cylinder.
- Roll butter cylinder in the chopped parsley to coat it.
- Wrap in Clingfilm and chill or freeze.
- Serve with gammon.
