How to make orange and almond cake:
The combination of oranges and almonds go really well in this cake.


12oz butter
12oz caster sugar
1lb self raising/cake flour
8oz blood orange flesh
4oz finely sliced almonds
6 eggs, beaten
(see measure conversions for more information)


- Cream the butter and sugar together.
- Add eggs one at a time with a small amount of the flour with each egg.
- Fold in the remaining flour.
- Add prepared fruit, mix well.
- Turn into a well-greased 8in tin.
- Bake in a moderate oven 325oF/160oC/gas mark 3 for about 2 hours or until the cake feels firm to touch.
