How to make nut and raisin bars:
The tray bake exemplifies the sort of cakes and bars that used to be baked at home for fetes and meetings.


6 tablespoons butter
3/4 cup caster/superfine sugar
2 eggs
1/2 cup raisins
3 tablespoons chopped walnuts
1 cup all purpose flour
halved walnuts to decorate
(see measure conversions for more information)


- Melt the butter slowly in a saucepan.
- Remove the butter from heat when melted.
- Stir in the sugar.
- Beat the eggs and stir into the sugar mixture.
- Fold in the flour.
- Add the raisins and chopped walnuts.
- Stir well.
- Put into a greased tray and smooth out.
- Place halved walnuts on top.
- Put into the oven at 200 degrees centigrade (see temperature conversions) for about 40-45 minutes until springy to touch.
- When cool cut into squares.
