How to make nougat:
A homemade version of the classic Italian confection. See Cooking with Sugar for information on the tricky process of boiling sugar.


2 cups almonds
1 1/2 cups caster/superfine sugar
a little butter
rice paper
(see measure conversions for more information)


- Blanch, skin (if necessary) and chop the almonds.
- Fry them in a little butter until golden brown.
- Blend the almonds in an electric blender with half of the sugar.
- Add the rest of the sugar slowly, blending as you go.
- Cook gently in a heavy saucepan stirring constantly until the mixture thickens.
- Line a shallow tin or tray with rice paper.
- Pour the nougat mixture into the rice paper lined tin or tray.
- Allow to set and cut into small slices.
