How to make Napoleon cookies:
An almond flavored cookie, sandwiched together with jelly when cold, which makes them a little different. We have no idea were the Napoleon connection comes from - any suggestions?

2 cups plain flour
10 tablespoons butter
5 tablespoons caster/superfine sugar
1 egg lightly beaten
2 tablespoons ground almonds
1 dessertspoon cold water
(see measure conversions for more information)

- Cream the butter and sugar together until pale and smooth.
- Add the flour and ground almonds and stir the mixture.
- Stir in the egg and cold water and mix to a stiff dough.
- Put in the fridge for 1 hour.
- Roll out thinly on a lightly floured surface and cut out with a biscuit cutter.
- Bake on greased baking trays for 10 minutes at 200 degrees centigrade (see temperature conversions).
- When cold, sandwich together with jelly of choice.
