How to make mushroom fried rice:
A quick and easy but substantial supper dish.


8 large mushrooms, peeled and sliced
1 onion, peeled and sliced
3 eggs, beaten
3 cups cooked rice
3 sliced cooked ham, shredded
1 shallot, peeled and chopped
1 tablespoon soy sauce
salt and black pepper
(see measure conversions for more information)


- Put some oil in a frying pan and make a thin omelette from the eggs.
- Remove from pan and set to one side.
- Add more oil if necessary and fry the onions until lightly browned.
- Add the mushrooms and cook for a few more minutes.
- Add the rice, ham, shallot and soy sauce.
- Season.
- Continue cooking until all the ingredients are heated through and well cooked.
- Cut the omelette into thin strips.
- Serve the mushroom rice garnished with the omelette strips.
