How to make Mole Verde sauce:
A hot, spicy sauce blended until smooth. Use with any meat; it is especially good with duck.


10 green or red tomatoes
2 small green chillies, deseeded and chopped very finely. (Wash hands thoroughly immediately after chopping!)
1 small onion chopped
2 cloves garlic peeled and chopped
2 large lettuce leaves chopped
4 sprigs coriander leaves chopped
a few sprigs of parsley chopped
(see measure conversions for more information)


- Put the tomatoes in a bowl and cover with boiling water.
- Leave for one minute, take tomatoes out of water and carefully peel off skins.
- Chop the tomatoes.
- Place in a blender with all the other ingredients and blend until smooth.
