How to make mocha cake:
This is a large, rich cake flavoured with coffee and chocolate, two favourites which when combined make the sublime mix called mocha.


6oz butter
6oz caster/superfine sugar
3 eggs
6oz self raising flour
2 tablespoons coffee essence
2oz plain chocolate, grated
a little icing/confectioner's sugar
(see measure conversions for more information)


- Cream the butter and caster sugar until light and fluffy.
- Beat in the eggs, adding a little flour each time the egg is added.
- Fold in the remaining flour.
- Add the coffee essence and chocolate.
- Pour the cake mix into a lined, well-greased 8 inch, round cake tin.
- Bake at 180 degrees C. for 1 hour and 30 minutes.
- Turn out onto a wire rack to cool.
- When cool dust the top of the cake with a little icing sugar.
