N.B. Be careful serving raw egg to vulnerable.
1/4 level teaspoon mustard powder
1/4 level teaspoon salt
1 tablespoon white vinegar
1 teaspoon lemon juice
1/4 pint olive oil
salt and pepper
a pinch of sugar
(see measure conversions for more information)
- Whisk until blended.
- Whisk in the oil drop by drop.
- Whisk steadily until the sauce becomes thick.
- Whisk in the lemon juice and vinegar to lighten the mayonnaise a little.
- Taste to check seasoning and add more salt and pepper if needed.
- This can all be done using a blender and adding the oil through the funnel while the motor is running.

How to make mayonnaise sauce:
Some people are nervous at the idea of making their own mayonnaise. It really isn't that difficult and is made extra easy if you use a food processor. Having said that do not expect to make mayonnaise that tastes and looks exactly the same as a shop bought variety.
Ingredients
1 large egg yolk1/4 level teaspoon mustard powder
1/4 level teaspoon salt
1 tablespoon white vinegar
1 teaspoon lemon juice
1/4 pint olive oil
salt and pepper
a pinch of sugar
