How to make May Toffee:
An extremely rich, soft toffee. See Cooking with Sugar for information on the tricky process of boiling sugar.


3 cups (1 1/2 lbs) granulated sugar
1 cup (1/2 lb) butter
vanilla extract
2 tablespoons golden syrup
medium sized tin condensed milk.
fill the condensed milk tin half with milk then top up with water
(see measure conversions for more information)


- Put all the ingredients into a pan.
- Heat gently making sure the sugar is completely dissolved.
- Keep on a gentle heat until the mixture is golden brown and until the "soft ball" stage is reached.
- Add the vanilla extract.
- Pour into a greased tin.
