1 cup (8oz) ground almonds
1 egg, beaten
1 teaspoon lemon juice
few drops almond essence
6 glace cherries to decorate
1 tablespoon rose water or water
(see measure conversions for more information)
- Sift icing sugar into a bowl, add the ground almonds and stir to mix.
- Add lemon juice, almond essence and enough beaten egg to bind the ingredients.
- Turn onto a board dusted with icing sugar and knead lightly until smooth.
- Divide the marzipan into 24 equal pieces and roll each portion into a ball, then press each ball to flatten slightly into rounds.
- Use the end of a wooden spoon to press and indent into the centre of each round.
- Press the prongs of a fork around the edges of each round to decorate.
- Place on the prepared baking sheet and leave to dry at room temperature overnight.
- Preheat the oven to 200oc/400of/gas mark6.
- Bake the marzipan rounds in the oven for 8 - 10 minutes, or until pale golden on top.
- Remove from the oven.
- For the glaze, sift icing sugar into the rose water or water and mix together.
- Brush over hot rounds.
- Cut the glace cherries into quarters and place one on top of each round.
- Cool on a wire rack and serve.

Baked marzipan sweets ideal to give, nicely packaged, as a gift.
