a few drops of natural yellow food colouring
2 tablespoons (4oz) crystallised ginger
icing/confectioner's sugar for rolling out
(see measure conversions for more information)
- Sprinkle a suitable surface with icing sugar, roll out the marzipan and cut into squares or any shape you like.
- Decorate with small pieces of crystallised ginger and leave to dry.
- Serve in small paper cases with coffee or drinks.

No need to cook this ginger flavoured sweetmeat. Impressive both in looks and taste it makes an ideal after dinner accompaniment to coffee.
Ingredients
1lb almond paste (also called marzipan)10 drops ginger extract
a few drops of natural yellow food colouring

Method
- Knead the essence and colouring into the marzipan.- Sprinkle a suitable surface with icing sugar, roll out the marzipan and cut into squares or any shape you like.
- Decorate with small pieces of crystallised ginger and leave to dry.
- Serve in small paper cases with coffee or drinks.
