How to make marrow sauce:
A very easy way of preserving marrow when you've got a bumper crop. Use as you would use tomato sauce.


1 ripe marrow about 3lb in weight, peeled, seeds removed and cut into small pieces
1/2 lb sugar cubes
1 large onion, peeled and stuck with 8 cloves
1oz salt
1oz dry mustard
1oz turmeric
1 quart of distilled vinegar

- Put the marrow into a preserving pan or heavy saucepan.
- Add the sugar, salt and onion with cloves.
- Add the mustard and turmeric.
- Add the vinegar.
- Boil gently for 1 hour.
- Stir occasionally.
- Remove the onion.
- Bottle when cold.
