1/4 teaspoon salt
1/2 cup organic butter
5 tablespoons organic caster/superfine sugar
2 medium organic, free-range eggs
2 tablespoons organic milk
a few drops of vanilla extract
a little organic lemon rind
(see measure conversions for more information)
- Sieve the flour and salt together in a separate bowl.
- Beat the eggs into the creamed butter and sugar, one at a time, adding a little of the flour.
- Beat thoroughly.
- Stir in the milk, again adding a little flour.
- Add the vanilla extract and stir in the rest of the flour using a metal spoon.
- Turn the mixture into a lined 6-inch tin and sprinkle the lemon rind on top.
- Bake at 180 degrees centigrade (see temperature conversions) for 1 hour.

How to make Madeira cake:
Madeira cake is plain closely textured and keeps very well in an airtight tin.
Ingredients
2 cups organic self-raising flour1/4 teaspoon salt
1/2 cup organic butter
5 tablespoons organic caster/superfine sugar

Method
- In a large bowl using a wooden spoon, cream the butter and sugar together until they become light in colour and fluffy in texture.- Sieve the flour and salt together in a separate bowl.
- Beat the eggs into the creamed butter and sugar, one at a time, adding a little of the flour.
- Beat thoroughly.
- Stir in the milk, again adding a little flour.
- Add the vanilla extract and stir in the rest of the flour using a metal spoon.
- Turn the mixture into a lined 6-inch tin and sprinkle the lemon rind on top.

I keep meaning to read an Anne Perry book - she writes about two victorian detectives doesn't she? Does she include a lot of recipes etc? I'm stuck on Agatha Raisin (M.C.Beaton) at the moment.

I'm a Anne Perry fan while reading her latest novel, Dark Assassin I came across the name of this cake,when I see the name of a different food or recipe I look it up and if it sounds good I make it. This one sounds really good and I look forward to making it. Ollie H.
