How to make London coffee house cake:
A light, rich sponge the like of which, it is claimed, was served at the old coffee houses of London. Top with coffee and walnut icing.


2 heaped tablespoonfuls of cocoa
4 tablespoons of hot water
8oz self raising flour
8oz butter
10oz caster/superfine sugar
4 eggs
2 tablespoons milk
fresh whipped cream

- Blend the cocoa with the hot water until smooth.
- Cool.
- Sieve the flour.
- Cream butter and sugar together until very light in colour and texture.
- Gradually beat in the cooled cocoa mixture.
- Beat in eggs, one at a time adding a little sieved flour after each egg.
- Fold in the remaining flour.
- Stir in the milk.
- Divide between two 8 inch sandwich tins.
- Bake at 180 degrees C. for 30-40 minutes.
- When cooked remove from tins and cool on a wire rack.
- Sandwich together with the whipped cream.
- Top with coffee and walnut icing.
