How to make lime dainty:
A delicious lime sauce topped with light, tangy sponge. This dessert is so easy it almost makes itself. Serve hot or cold.


Lime Dainty
6oz caster sugar
1 1/2 ozs plain flour
1oz butter, cut into tiny pieces
2 egg whites, beaten stiff
2 egg yolks
6floz milk
the zest and juice one large lime
(see measure conversions for more information)


- In a bowl beat together the sugar, flour, butter, lime zest and juice and egg yolks.
- Make sure all the ingredients are mixed thoroughly.
- Gradually beat in the milk.
- Fold in the beaten egg whites.
- Pour into a greased oven-proof dish.
- Bake at 180 degrees C. for 40 - 45 minutes or until the pudding is firm on top and lightly browned.
- Allow to cool for a few minutes before serving.
