Lentil and Tomato Soup Recipe

A filling lunchtime soup which is almost a meal in itself.

Ingredients

  • 1 small onion, peeled and chopped
  • 4 medium tomatoes, chopped
  • 2 tablespoons oil
  • 1/2 cup lentils
  • 1/2 pint tomato juice
  • 1 1/2 pints vegetable stock
  • 1/2 teaspoon thyme
  • 1/2 teaspoon yeast extract
  • seasoning to taste

Method

  1. Heat the oil in a saucepan and saut´┐Ż the onion until transparent.
  2. Add the remaining ingredients, cover and simmer for 30 minutes.
  3. Add seasoning to taste.

Prep Time: 10 minutes

Cook Time: 35 minutes

Yield: 4 - 6 portions
