How to make lentil pie:
A good vegetarian standby. In this case the pie is like a shepherds or cottage pie in as much as it does not have pastry but is topped with mashed potato.


1 cup tinned lentils
4 tablespoons butter
2 onions
2 heaped tablespoons flour
salt and black pepper
1 pint of vegetable stock
herbs of choice
1 small garlic clove if liked
mashed potato
(see measure conversions for more information)


- Drain lentils.
- Heat butter in a frying pan and fry chopped onions until brown.
- Remove them from the pan.
- Stir flour into pan and gradually add stock.
- Bring to the boil.
- Add garlic, herbs and seasoning.
- Put lentils and onions into an oven proof dish and pour over some of the sauce from the frying pan.
- Cover with the mashed potato.
- Bake at 200 degrees centigrade (see temperature conversions) for about 1 hour.
- Keep remainder of sauce to serve with meal.
