Dessert - Lemon Rice Pudding with Lemon Curd
1 1/2 oz pudding rice
1 pint full cream milk
1oz sugar
grated rind half a lemon (add more if you want a stronger lemon flavour)
small piece of butter
lemon curd to serve
(see measure conversions for more information)
- Put rice, sugar, milk and lemon rind into the dish.
- Stir well.
- Bake at 150 degrees C. for about 2 hours or until the rice is tender.
- Serve with lemon curd.

A real cold weather pudding. Comfort food at its best with a tangy surprise - a generous helping of smooth, creamy, homemade lemon curd. Serves 2-3.Ingredients

Method
- Grease an ovenproof dish.- Put rice, sugar, milk and lemon rind into the dish.
- Stir well.
- Bake at 150 degrees C. for about 2 hours or until the rice is tender.
- Serve with lemon curd.
