Dessert - Lemon Ice Cream with Cigarettes Russes

How to make lemon ice cream:
A great tasting traditional ice cream. This recipe does contain uncooked egg yolks so caution for vulnerable groups.


Apple and Honey Ice Cream
8 egg yolks
8oz caster sugar
juice 1 large lemon
1/2 pint whipping cream, lightly whipped
(see measure conversions for more information)


- Whisk the egg yolks and sugar together until pale and creamy.
- Add the lemon juice.
- Fold in the cream.
- Pour into a clean, lidded carton (e.g. a plastic ice cream container)
- freeze for 2 hours.
- Turn into a bowl and whisk until smooth.
- Return to freezer.
- Allow to soften at room temperature before serving.
- Serve with cream and Cigarettes Russes.
