How to make lemon cake:
A delicious cake to try that can be eaten cold as a cake or hot as a dessert.


1/2 cup butter
6 heaped tablespoons self-raising flour
2 eggs
1 teaspoon baking powder
the rind of 1 lemon, finely grated
6 tablespoons caster/superfine sugar
4 tablespoons milk

for lemon sauce:
juice of 1 lemon
4 tablespoons sugar

- To make the cake, mix all the ingredients together (apart from the sauce ingredients).
- Cooke the cake in one tin at 180 degrees centigrade for 30 - 40 minutes (see temperature conversions).
- When ready the cake should be firm and springy to the touch.
- To make the sauce heat the sugar and lemon juice to the boil and then simmer gently for several minutes. See Cooking with Sugar for information on the tricky process of boiling sugar; for this recipe you want to produce a syrup.
- While the cake is still hot, make a few small holes in the cake with a fork and then pour the lemon sauce over it. This allows the syrup to be absorbed into the cake.
