How to make Leeks With A Rich Tomato Sauce:
This is an easy, fresh-tasting starter which can be served hot or cold. Eat it with fresh, crusty bread and a little extra olive oil and lemon juice.



Ingredients

Leeks With A Rich Tomato Sauce
2lb of small tender leeks trimmed, washed and sliced
3/4lb tomatoes skinned and chopped
4 tablespoonfuls of olive oil
2 cloves of garlic peeled and crushed
salt and black pepper
1 tablespoonful chopped parsley
a little lemon juice

Method

- Heat the oil in a deep frying pan.
- Add the leeks keeping the slices whole and separate.
- Fry very gently until the leeks are  soft and slightly browned.
- Season the leeks with the salt and pepper.
- Gently remove the leeks from the pan and put them on a warm plate.
- Put the tomatoes into the pan.
- Add the garlic.
- Cook gently until a rich sauce is formed.
- Add a teaspoon of lemon juice to sharpen the flavour.
- Serve the leeks with the tomato sauce.

I wonder just how much land it would take to feed a family of, say, 4? I know that if my family didn't buy fruit and veg we wouldn't have enough to eat but is self sufficiency down to amount of land or method of growing? Last year I overcrowded my small veg plot with counter-productive results like mildew and snail infestation that went unnoticed until we came to pick the tomatoes (all holes!). I wonder if anyone has ever been totally self providing or whether the local market and barter played...
