Starter - Leeks Nicoise
Main Course - Mutton Haricot
Dessert - Almond Pancakes with Fruit Coulis
1/2 cup of olive oil
1 1/4 cups of water
1 tablespoon tomato paste
1 teaspoon sugar
seasoning to taste
Lemon juice
3/4 cup small black olives
parsley chopped
(see measure conversions for more information)
- Place them in a heavy frying skillet or a deep saucepan.
- Add the oil, water, tomato paste and sugar.
- Season to taste and cook, covered for about 15 minutes, until the leeks are very tender.
- Add lemon juice to taste.
- Lift onto a platter and serve sprinkled with the olives and parsley.

How to make leeks Nicoise:
Leeks are still plentiful in the shops and for a quick and easy starter this recipe is perfect.
Ingredients
8 - 10 medium leeks1/2 cup of olive oil
1 1/4 cups of water
1 tablespoon tomato paste
1 teaspoon sugar
seasoning to taste
Lemon juice
3/4 cup small black olives
parsley chopped

Method
- Trim and wash the leeks cut into 2 inch lengths.- Place them in a heavy frying skillet or a deep saucepan.
- Add the oil, water, tomato paste and sugar.
- Season to taste and cook, covered for about 15 minutes, until the leeks are very tender.
- Add lemon juice to taste.
- Lift onto a platter and serve sprinkled with the olives and parsley.
