How to make Lamb Provencal:
A sophisticated lamb dish cooked in the French style with the typical ingredients of a Provencal dish, onions and tomatoes.


4 cups uncooked lamb in slices
freshly ground pepper
1 tablespoon flour
1 tablespoon cooking oil
1 onion, peeled and finely chopped
1 cup skinned, seeded and chopped tomatoes
1 small green pepper, seeded and sliced
1/2 tablespoon tomato paste
2/3 cup white wine
1 cup thinly sliced mushrooms

- Pound the lamb slices well to tenderize.
- Mix a little pepper with the flour and use it to dust the lamb slices.
- Heat the oil in a saucepan, add the meat and brown quickly.
- Add the onion, tomatoes, pepper, tomato paste, white wine and mushrooms.
- Cook for 15 minutes over a gentle heat.
- Adjust the seasoning, if necessary, and serve with plain boiled rice.
