How to make lamb and walnuts:
A fairly complicated recipe, the main theme being lamb cooked in a sweet yet tangy sauce with the novel addition of walnuts.


small leg of lamb
1 tablespoon flour
1 tablespoon oil
1 clove of garlic crushed
2 large onions sliced
1/2 pint unsweetened pineapple juice
3 tablespoons tomato puree
2 tablespoons brown vinegar
2 teaspoons soy sauce
1 tablespoon brown sugar
1/2 teaspoon curry powder
4 thin strips lemon peel
2 tablespoons walnuts chopped
freshly ground black pepper

- Trim all visible fat from meat and discard.
- Cut lean meat into cubes.
- Roll in seasoned flour.
- Brown in non-stick pan in oil and place in casserole dish.
- Sauté garlic and onion in pan.
- Add all other ingredients to pan except walnuts and simmer for 5 min.
- Pour over meat in casserole dish.
- Add walnuts and cook in oven for 1 hour at 180 degrees centigrade (see temperature conversions).
- Remove excess fat from casserole.
- Add lemon strips and season to taste with pepper.
- Serve with rice garnished with parsley or sultanas.
