How to make Lamb and Pumpkin Halloween Stew:
Use Pumpkin flesh from your hollowed out Halloween lantern. This delicious casserole will keep out the November chills.


6 cups (3 lbs) fillet of lamb, chopped into bite size cubes
4 cups (2 lbs) pumpkin flesh
4 tablespoons vegetable oil
2 large red onions, peeled and chopped
4 cloves garlic, peeled and crushed
1 large can tomatoes
1 pint lamb or vegetable stock
salt and black pepper
1/2 teaspoon oregano (or to taste)
1 large green pepper, deseeded and chopped
2 medium cans chick peas, drained

- Heat the vegetable oil in a heavy bottomed lidded saucepan.
- Fry the lamb until sealed; add the onions, pepper and garlic and fry gently for a few minutes.
- Add the tomatoes and stock.
- Cook for 30 minutes and then add the pumpkin and chick peas.
- Add the stock and bring to the boil then reduce heat and simmer for about an hour or until the meat is tender and liquids have reduced to a nice sauce.
