8oz caster/superfine sugar
4 eggs, beaten
1/2 teaspoon vanilla essence
8oz self raising flour
1 teaspoon baking powder
10 large ripe plums, halved and stoned
1 tablespoon soft light brown sugar
caster sugar for decoration

- Cream the butter and sugar together in a mixing bowl beat in the eggs and vanilla essence and fold in the flour.
- Chop 5 of the plums and fold into the cake mixture.
- Spoon into a lightly greased, lined 8 inch round cake tin and level the surface.
- Arrange the remaining plum halves on top and sprinkle with the brown sugar.
- Bake in the centre of the oven for 1 1/4 to 1 1/2 hours or until a thin sharp knife inserted into the cake comes out clean.
- Leave to cool in the tin and then remove and peel off the lining paper.
- Sprinkle caster sugar on top of the cake before serving.

A cake sent in by a reader that obviously gets its name from Little Jack Horner of Nursery Rhyme fame!Ingredients

Method
- Preheat the oven to 350oF/180oC/gas mark 4.- Cream the butter and sugar together in a mixing bowl beat in the eggs and vanilla essence and fold in the flour.
- Chop 5 of the plums and fold into the cake mixture.
- Spoon into a lightly greased, lined 8 inch round cake tin and level the surface.
- Arrange the remaining plum halves on top and sprinkle with the brown sugar.
