How to make Italian lemon ice cream:
A lemony, zesty and creamy ice cream that is so simple to make yet tastes truly authentic.


Italian Lemon Ice Cream
4 tablespoons freshly squeezed lemon juice
14ozs granulated sugar
2 1/2 pints water
zest of 1 lemon
1/2 pint double cream, whipped
(see measure conversions for more information)


- Place the lemon juice, sugar, water and lemon zest into a saucepan.
- Bring the mixture slowly to the boil.
- Stir carefully making sure all the sugar dissolves.
- Bring to the boil.
- Boil for 15 minutes.
- Strain through a sieve.
- Allow to cool.
- When the mixture is cold, fold in the cream.
- Put the mixture into a suitable container and freeze until set.
- Take the container out of the freezer at regular intervals and stir the mixture during the freezing process.
