How to make Irish stew:
Traditional Irish one pot meal using what was at one time a very cheap cut of meat.


approx. 10 joints neck of lamb
4 large potatoes
2 onions
3/4 pint water
(see measure conversions for more information)


- Divide the meat into even pieces if necessary.
- Peel the potatoes and cut them into chunks.
- Peel and slice the onions.
- Put all the ingredients into a deep casserole in alternate layers of meat, potatoes and onions.
- Season each layer.
- Pour the water over and put the lid on the casserole.
- Cook for 4 hours in a very slow oven.
