1oz flour
1 pint milk
salt and pepper
4oz cheese, grated
1 cauliflower, cooked and broken up into florets
2 eggs, separated
3 tomatoes, sliced
(see measure conversions for more information)
- Season and add 3oz of the cheese.
- Stir well until the cheese has melted.
- Cool.
- Beat in the egg yolks.
- Fold in the stiffly beaten egg whites.
- Layer the cauliflower, tomato slices and cheese mixture in a ovenproof dish.
- Make the final layer the cheese mixture.
- Sprinkle the remaining cheese on top.
- Bake at 200 degrees centigrade for about 30 minutes.
- The top layer should be well risen and set.
