How to make hunter's stew:
Game is now widely available in most supermarkets. Here is a recipe that will give you the chance to experiment with game if you have not tried it before.


2 tablespoons olive oil
2 medium onions - chopped
3 cloves garlic - crushed
1 large cooking apple, peeled, cored and chopped
1 large green pepper, seeded, sliced and chopped
tin of tomatoes drained and chopped
1/2 pint beef stock
1/2 pint red wine
1 teaspoon caraway seeds
2 rabbits jointed and boned, cut into large pieces
4 cups lean stewing venison, cut into cubes
5 medium sausages

- Cook the onions and garlic in some oil until soft and translucent.
- Add apple, caraway seeds and black pepper.
- Mix and stir over heat for 3 minutes.
- Pour onion mixture into a large deep casserole dish.
- Brown meat in frying pan with remaining oil.
- Remove rabbit and set aside.
- Add green pepper and sausage and cook, stirring occasionally for 5 minutes.
- Stir in the tomatoes, seasoning and cook for a further 2 minutes.
- Add to onion mixture, stirring well to blend.
- Pour in stock and wine.
- Put covered casserole dish and bake for 1 hour at 180 degrees centigrade (see temperature conversions).
- Add rabbit pieces and bake for a further hour or until meat is cooked.
- Serve with warm crusty bread.
