1 teaspoon vinegar
2 teaspoons lemon juice
4 tablespoons double cream
2 tablespoons single cream
pinch of mustard powder
salt and pepper
(see measure conversions for more information)
- Put 3 tablespoons of grated horseradish into a mixing bowl and add the lemon juice.
- Mix together well.
- Add the vinegar, mustard powder and cream.
- Stir until well blended.
- Taste cautiously (it may be very hot) and add salt and pepper as required.

- Grate or mince the horseradish.
- Pack into small jars.
- Add one teaspoon of salt to each half pint of vinegar.
- Mix vinegar and salt well.
- Cover the horseradish with the vinegar and salt mixture.
- Seal tightly.
As the time is right I am looking to make some horseradish sauce which I can bottle and keep.
