Sauce & Pickle Recipes > Horseradish Sauce

How to make horseradish sauce:
A delicious accompaniment to roast beef, this is a traditional English sauce originally prized for its bitterness. Horseradish is a root that grows readily in the garden and when peeled and grated provides the hot flavor for the sauce.

1 root horseradish, washed and peeled
1 teaspoon vinegar
2 teaspoons lemon juice
4 tablespoons double cream
2 tablespoons single cream
pinch of mustard powder
salt and pepper
(see measure conversions for more information)

- Grate the horseradish (be careful of the strong fumes).
- Put 3 tablespoons of grated horseradish into a mixing bowl and add the lemon juice.
- Mix together well.
- Add the vinegar, mustard powder and cream.
- Stir until well blended.
- Taste cautiously (it may be very hot) and add salt and pepper as required.
