1 pint water
3 cups organic sugar
1/2 cup organic butter
(see measure conversions for more information)
- Strain and add the sugar to the resultant liquid.
- Boil again and add the butter.
- Continue to boil until syrup has reached the "hard ball" stage when dropped into a saucer of cold water.
- Pour into a buttered shallow tin.
- When cool, mark it into squares.
- When hardened break squares apart and wrap each one in greaseproof paper.

How to make horehound candy:
This is simply a boiled candy recipe where the sugar is flavored with horehound. These candies were used primarily for the treatment of coughs and colds rather than for treats since horehound is rather bitter. See Cooking with Sugar for information on the tricky process of boiling sugar.
Ingredients
1 3/4 pints horehound leaves and stems1 pint water
3 cups organic sugar
1/2 cup organic butter

Method
- Make a strong brew of horehound by boiling the leaves and stems in the water for half an hour.- Strain and add the sugar to the resultant liquid.
- Boil again and add the butter.
- Continue to boil until syrup has reached the "hard ball" stage when dropped into a saucer of cold water.
- Pour into a buttered shallow tin.
- When cool, mark it into squares.
- When hardened break squares apart and wrap each one in greaseproof paper.
