How to make honey treats:
These sweets/candies can be flavoured with vanilla, lemon or strawberry and are traditionally coloured pink. See Cooking with Sugar for information on the tricky process of boiling sugar.



Ingredients

4 cups (2 lbs) granulated sugar
2/3 cup (3 fluid ozs) water
3 tablespoons clear honey
3/4 cup (6 fluid ozs) light/single cream
1/2 tablespoon butter
strawberry, lemon or vanilla extract
natural pink food colouring
(see measure conversions for more information)

Method

- Place the sugar in a heavy-based pan with the water and stir over a low heat to dissolve the sugar.
- Stir in the honey, cream and butter and boil until a sugar thermometer registers 290of (145oc).
- Quickly stir in the flavouring and coloring and pour on to an oiled slab.
- Leave to set, and then cut into small squares.

Land For Food Production


I wonder just how much land it would take to feed a family of, say, 4? I know that if my family didn't buy fruit and veg we wouldn't have enough to eat but is self sufficiency down to amount of land or method of growing? Last year I overcrowded my small veg plot with counter-productive results like mildew and snail infestation that went unnoticed until we came to pick the tomatoes (all holes!). I wonder if anyone has ever been totally self providing or whether the local market and barter played...
