1/2 teaspoon salt
1/2 cup boiling water
1 cup scalded milk
1 cup corn meal
3 tablespoons sugar
3 tablespoons butter
2 eggs
3 teaspoons baking powder

- Put this aside.
- The hominy will absorb the water.
- Add the corn meal to the scalded milk then add the butter and the sugar.
- Mix the hominy mixture with the corn meal mixture.
- Allow to cool a little.
- Separate the eggs.
- Beat the yolks until thick and the whites until stiff.
- Add all the eggs to the mixture and then sift in the baking powder.
- Beat thoroughly.
- Bake in hot buttered gem pans in a hot oven for about 25 minutes.
