How to make herb potato cakes:
These potato cakes work very well with any hot meal or salad and are also delicious served on their own hot or cold.


4 old potatoes
1 onion
2 tablespoons wholemeal flour
1 teaspoon salt
freshly ground black pepper
6 tablespoons butter
sour cream to serve
finely chopped fresh herbs of choice
(see measure conversions for more information)


- Peel the potatoes and onion.
- Grate the potatoes and onion.
- Drain off any liquid.
- Mix the grated vegetables with the flour.
- Add seasoning.
- Stir in the herbs.
- Fry tablespoonfuls of the mixture in the butter.
- Turn once.
- Serve with sour cream.
