4oz sugar
2 1/2 oz self-raising flour
1/4 pint single cream
2 1/2 oz ground hazelnuts
1 teaspoon baking powder
melted dark chocolate to cover
quartered hazelnuts to decorate
(see measure conversions for more information)
- Add sifted flour and baking powder.
- Add hazelnuts.
- Spoon into a well-greased and lined 9 inch square cake tin.
- Bake for about 30-35 minutes at 190oC.
- Cool.
- Turn out cake and decorate with melted chocolate and hazelnut quarters.

How to make hazelnut cake:
A light sponge cake which uses cream rather than butter for the fat. Try and use a good quality chocolate as the decoration; the higher the cocoa solids content the better although make sure that it isn't too bitter for your tastes before you cover the cake.
Ingredients
2 eggs4oz sugar

- Mix eggs, sugar and cream well.- Add sifted flour and baking powder.
- Add hazelnuts.
