6 spring onions
2 tablespoons mint leaves, chopped very finely
2 tablespoons butter
1 tablespoon single cream
3/4 cup Mascarpone cheese
1 tablespoon lemon juice
lemon slices to garnish
parsley to garnish
salt and black pepper to taste
(see measure conversions for more information)
- Allow to cool and then chop.
- Trim and chop the spring onions and then cook them very gently in the butter.
- Add the mint and spinach and set aside to cool.
- When the mixture is completely cool, stir in the Mascarpone cheese, the salt and pepper and the lemon juice.
- Blend in a blender or food processor until a fine texture is achieved.
- Check seasoning and then spoon into individual dishes.
- Cover and chill in the fridge for at least two hours.
- Serve garnished with lemon slices and sprigs of parsley.
- This pâté goes very well with hot garlic bread.

How to make green summer pâté:
This is a light and easy to make starter or dip. This recipe serves four people.
Ingredients
4 cups young, tender chopped spinach tightly packed6 spring onions
