A nice way of using up an abundant crop of runner beans.

  • 2 tablespoons butter
  • approx 20 runner beans, string removed, thinly sliced
  • 3 onions, chopped
  • 1 carrot chopped
  • 1 1/2 pints vegetable bouillon
  • seasoning
(see measure conversions for more information on quantites)

  1. Melt the butter and fry the beans, onions and carrot until soft but not browned.
  2. Add the bouillon, bring to the boil, cover and simmer gently for about 30 minutes until the vegetables are tender.
  3. Puree in a blender, then return the soup to the pan, season to taste and reheat.

Prep Time: 5 minutes

Cook Time: 35 minutes

Yield: 2 - 4 portions

thanks for the recipe. I have been picking the beans in my garden and wanted to make use of them. This recipe is dead simple and does the beans justice. thanks.

Such a simple recipe but absolutely delicious. I never liked runner beans before but now I can't get enough of them!

Made it for lunch. Didn't blend the soup and added half a tin of baked beans which had been languishing in the fridge. Scrummy. Looking forward to trying out your other recipes

Well to say i wasnt too optimistic on the flavour was an understatement, BUT omg this soup is absolutely scrummy yummy, and if you use less butter very low calorie, so ive made loads and frozen it!! I will be living on this throughout the winter!!
