How to make Greek salad:
A traditional Greek salad that is ideal if you want something quick and easy. Fresh summer ingredients, plump, ripe olives with the tangy, salty flavours of anchovies and feta cheese.





Ingredients

Greek Salad
3 tomatoes, cut into thin wedges
1 cucumber, peeled and sliced
2 green peppers, deseeded and sliced
1 spanish onion, peeled and finely chopped
8oz feta cheese cubed
approx. 10 kalamati black olives (remove stones if necessary)
small tin anchovy fillets

for dressing:

4 floz olive oil
3 floz white wine vinegar
1 garlic clove, peeled and crushed
2tbs finely chopped dill
1 teaspoon fresh oregano, finely chopped
1 teaspoon salt
freshly ground black pepper

Method

- Mix all the salad ingredients together.
- Combine all the dressing ingredients and whisk or shake together.
- Pour the dressing over the salad and mix lightly.
- Add the olives, anchovies and feta.
