Dessert Recipes > Gooseberry Crumble

How to make gooseberry crumble:
This used to be a classic English country dessert. Nowadays it is hardly ever seen because fresh gooseberries are no longer widely available.

5 cups gooseberries, topped and tailed
enough organic sugar to sweeten
5 heaped tablespoons organic self-raising flour
4 tablespoons organic butter
1 1/2 tablespoons organic sugar
(see measure conversions for more information)

- Grease a large pie dish and layer the gooseberries into it with enough sugar to sweeten them.
- Pour about 4 tablespoons of water over the gooseberries.
- Rub the butter into the flour until the mixture resembles breadcrumbs.
- Add the 1 1/2 tablespoons of organic sugar.
- Spoon the mixture on top of the fruit and bake for 25-30 minutes at 190 degrees centigrade (see temperature conversions).
- The topping should be lightly browned and the fruit cooked.
