1/4 teaspoon powdered ginger
1 medium sized chicken
1 cup long-grain rice
pinch of saffron
almonds
maraschino cherries
for glaze:
1/4 cup sliced preserved ginger in syrup
1 tablespoon lemon juice
3 tablespoons sherry
1 tablespoon margarine
(see measure conversions for more information)
- Use this mix to dust the inside of a browning bag.
- Place the chicken in the bag and follow the instructions given with the bag.
- Cook at 200 degrees centigrade (see temperature conversions) for 1 1/4 hours.
- Cook the rice in boiling water.
- Put the sherry and margarine into a small saucepan.
- Bring to the boil and simmer until reduced to a syrup.
- When the chicken is cooked, remove from the bag and divide in half lengthways.
- Arrange the rice on a warmed serving dish and place the chicken on the rice, cooked side uppermost.
- Pour over the glaze and serve garnished with the sliced ginger, almonds and maraschino cherries.
